When suppertime rolled around last night I decided to kick things up a bit and try out a new recipe. We have our favorite recipes but I felt the urge to break free of the tried-and-true and cook something different. I cooked up a pot of tofu chili. This photo is my serving topped with sour cream and scallions... yum! I wasn't sure it would be tasty, trying new recipes can disappoint, but luckily this chili turned out pretty good. I'll definitely make it again sometime. Dual benefit: a nutritious meal and avoiding the mundane of eating/cooking the same ol' same ol'.
Think I'll make a new healthful tofu recipe every Tuesday night during the month of February. Tofu Tuesday will be a day/meal to look forward to each week. I'd love to get some tofu recipe ideas from readers... any suggestions?
